A typical order moves through four stations: shape and place the right crust, load it with the requested filling, slide it into the oven and pull it at the right moment, then finish it at the topping station with whatever glaze, drizzle or garnish the ticket calls for. - Watch the oven closely once a pie goes in — pulling it too early or too late costs points even if everything else about the order is right.
- During a rush, get every pie's crust and filling done first, then cycle back through baking and topping. Trying to finish one pie start-to-finish before starting the next falls behind fast.
